VINIFICATION
After harvesting, the bunches are de-stemmed and the berries lightly pressed. The must obtained, together with the skins, is transferred to the wine vessels where alcoholic fermentation begins at a controlled temperature. After at least 15 days of maceration, the racking takes place, then the wine is left to rest until bottling for about 42 months in second passage barriques and tonneaux.
Method of harvest: by hand in small boxes.
State of the grapes: perfectly ripe at the time of harvest.
Harvest time: first week of October.
Grapes: Tazzelenghe native grapes
TECHNICAL NOTES
Color: Amaranth tending to purple.
Perfume: In its complexity, notes of licorice, tobacco and nuts emerge. On the final hints of coffee.
Taste: intense, decisive, spicy. Red fruits, ripe fruit jam, hazelnuts. Tannins muffled by the long aging in wood that recall pepper.
PAIRINGS

Given the importance of tannins, it is a wine that goes perfectly with any kind of fatty food. Game and red meat in general. Excellent at the end of a meal with very aged cheeses.
