After harvesting, the bunches are de-stemmed and the berries lightly pressed. The must obtained, together with the skins, is transferred to the wine vessels where alcoholic fermentation begins at a controlled temperature. The racking takes place between 12 and 15 days and then the wine is left to rest until bottling.
Method of harvest: by hand in small boxes.
State of the grapes: perfectly ripe at the time of harvest.
Harvest time: last week of September.
Grapes: Refosco derives from the union of different clonal varieties of the same vine. The following clones are present: Standard di Faedis, Nostrano Base, Peduncolo Rosso ISVF1, ISVF4T. The union of the different clones allows to obtain a very complex wine with multiple nuances.
TECHNICAL NOTES
Color: Intense ruby red.
Bouquet: predominance of blackberries and raspberries, pepper and tobacco.
Taste: wide, enveloping and warm wine with spicy notes, strong but round tannins. Very persistent. Berries.
PAIRINGS
In general on all game and grilled red meats. Excellent with aged cheeses.
