Aubergines in extra virgin olive oil, a typically Mediterranean product produced with organic aubergines grown in their own plots in the mountains.
The aubergines used for this product are harvested and processed within the same day. The processing phase foresees that they are cut into slices, first put in salt for several hours, finally acidified briefly in the heat with a delicate mixture of vinegar and typical Mediterranean aromatic herbs. The flavor of the aubergines is enhanced by a “tanning” based on capers and spices such as chilli, oregano and garlic.
