Soft pressing, classic white vinification with cleaning of the must by decantation, first racking and fermentation at controlled temperature (18-20 ° C).
Method of harvest: by hand in small boxes.
State of the grapes: perfectly ripe at the time of harvest.
Harvest period: second week of September.
Grapes: this Tocai Friulano derives from the union of different clonal varieties of the same vine. The following clones are present: F6, R5, F2, FEDIT 19. The union of the different clones allows to obtain a very complex wine with multiple nuances.
TECHNICAL NOTES
Color: straw yellow with greenish hues.
Bouquet: intense, delicately aromatic and floral, fragrant and persistent.
Taste: dry, soft, slightly fruity that fades on the finish in the typical taste of toasted almonds. Hints of ripe yellow peach.
PAIRINGS
This autochthonous wine goes perfectly with all kinds of cured meats, especially raw ham. First courses based on fish, grilled white meats and young raw milk cheeses.
