Cabernet DOC Friuli Aquileia
VINIFICATION
After harvesting, the bunches are de-stemmed and the berries lightly pressed. The must obtained, together with the skins, is transferred to the wine vessels where alcoholic fermentation begins at a controlled temperature. The racking takes place between 12 and 15 days and then the wine is left to rest until bottling.
Method of harvest: by hand in small boxes.
State of the grapes: perfectly ripe at the time of harvest.
Harvest period: third week of September
Grapes: this Cabernet derives from the union of different varieties
clonal of Cabernet Sauvignon and Cabernet Franc. Experience
and the knowledge of our wines allows us to find the right one
balance between the two types of grapes that make up
this wine.
TECHNICAL NOTES
Color: Ruby red with violet reflections.
Bouquet: predominance of small berries, blackberries and cherries
Taste: decisive entry with slight herbaceous hints which are then confused with ripe wild fruit and spices.
PAIRINGS
Definitely perfect with cured meats. Excellent with goulash or meat stews. Grilled fillet. Blue and aged cheeses.
